Family Night In! Family-Friendly Movie Pick of the Week: Never Say Never!
We are in the midst of award season with the Grammy’s behind us and the Oscar’s just around the corner and I heart all the entertainment excitement! This is the time when the best of the best are recognized for their hard work, I always find it amazing to watch the stars gain popularity and see how kids react to the role models. Check out our movie pick of the week, it teaches a good lesson about the rewards earned from working hard!

This movie teaches how hard work pays off when you believe in your dream, be kind along the way, and always remember where you came from. In a time where our country sees lots of turmoil and strife, this movie is an uplifting opportunity to teach the kids how dreams really can come true. You come away with a respect for the dedication it takes to rise to the top and an appreciation for the talent of a young boy who wasn’t afraid to dream big despite people telling him he would never make it.

This touching movie has some tough subjects and may be a tear-jerker at points. However, in a time when our country has many hardships, this story rings true about the inner strength that burns within each of us and the sheer will we have to make our lives better.
Due to the violence, sexual content, language, drugs and alcohol, the National Board of Mothers® was not able to give this movie it’s Seal of Approval.

We are just one week from Christmas, and I completely heart this time of year. Christmas for me means quality time with my loved ones and an opportunity to take a time out in the midst of my self-inflicted entrepreneur addiction.
One of my favorite things about Christmas is the opportunity to get caught up on family movies. I love the movie experience, my favorite blanket, a bowl of popcorn and great moral lessons all in the comfort of my home.
This week’s family movie is a fun story that comes with valuable lessons for all ages. This is one of those movies you watch and not only learn from, but also find yourself thinking about throughout daily life. Enjoy!
Miracle Dogs

When it’s cold outside a cup of Chicken Noodle Soup is the perfect thing to warm you up from the elements. Enjoy this fun to make yummy recipe!
Chicken Noodle Soup: For a speedy recovery
The Cast:
• 1 Tablespoon butter
• 2 Garlic cloves, minced
• 1 Cup chopped onion
• 1 Cup chopped celery
• 1 Cup peeled and sliced carrots
• 5 Cups chicken broth
• 5 Cups low sodium chicken broth
• ½ Pound shredded cooked chicken breast (you can use meat from a rotisserie chicken)
• 2 Cups egg noodles
• ¼ Cup fresh basil, chopped
• ¼ Cup fresh oregano, chopped
• Salt and pepper to taste
The Script:
• In a large soup pot, melt the butter over medium heat. Add the garlic, onion, celery and carrots and sauté until the vegetables are starting to tender, about 5 minutes.
• Pour in the chicken broth and stir in the chicken, basil, oregano, salt & pepper to taste. Bring to a boil, then reduce heat and simmer for 15 – 20 minutes.
• Meanwhile, cook the egg noodles in a separate pot according to the package directions. Drain and rinse with cold water.
• Add the drained noodles to the soup and simmer for another 10 minutes. Serve with your favorite crackers or crusty bread.
Makes 5 – 6 servings. This soup can be frozen if the egg noodles are frozen separately from the soup.

Laura says: I liked the focus on the family striking together even after the loss of the mother, and Alice’s desire to find a positive role model in her life, which is something that mostly all children need whether they have both parents or not.
Kelly says: It was a fine movie.
Mary says: I liked the story line very much! It was refreshing to actually see various characters apologizing for something they said.
Worth Noting: Typical adolescent humor and some language that could be considered bullying. Lying should never be accepted.

What better way to cuddle up and enjoy your movie night family tradition than with a Peach Upside Down Cake? This yummy desert is fun for the whole family to prepare and devour. Enjoy the mouth-watering sweetness!
The Cast:
Topping
• 2 Cups sliced fresh (or canned) peaches
• ½ Cup brown sugar
• Cinnamon to taste
• Juice and grated rind of 1 lemon
• 1 Tablespoon flour
• 3 Tablespoons melted butter
Batter
• 1 Cup all purpose flour
• 1/3 Cup brown sugar
• 1 Teaspoon baking powder
• ¼ Teaspoon salt
• 2 Egg yolks
• 1 Tablespoon melted butter
• ½ Cup milk
The Script:
• Preheat oven to 425 degrees.
• Grease an 8” deep-deep pie plate or baking pan and cover the bottom with sliced peaches.
• Sprinkle peaches with brown sugar, cinnamon to taste, the lemon juice and lemon rind.
• Sprinkle with 1 Tablespoon flour and stir gently to mix. Then pour the melted butter over that.
• Make the batter by mixing the flour, sugar, baking powder and salt together. In a separate bowl, mix the egg yolks, milk and melted butter together until combined, then add to the flour mixture and beat until blended. If the mixture is to dry, slowly add more milk until the batter can be easily poured.
• Pour batter evenly over the fruit and bake for 30 minutes. Reverse the cake out of the pan onto a platter and let cool slightly before serving.
Makes 6 – 8 servings.

This classic family movie calls for a classic recipe, and this week we are featuring the fun Golden Fish Sticks, a fun crunchy entrée:
Golden Fish Sticks:
The Cast:
Dipping Sauce
• 5 Tablespoons low-fat mayonnaise
• 3 Tablespoons sweet pickle relish
• 3 teaspoons lemon juice
Fish Sticks
• 3 1/2 cups cornflakes or panko crumbs
• 1 Tablespoons lemon zest
• 3 teaspoons lemon juice
• 1/2 cup butter, melted
• 1 1/2 pounds white fish fillets
• (cod, tilapia), cut cross-wise into 3/4 inch strips
The Script:
• Position rack in top third of the oven and preheat to 500 degrees.
• Mix the mayonnaise, relish and lemon juice in a small bowl. Season the sauce to taste with salt and pepper. Set aside.
• Grind the cornflakes in a processor until coarse crumbles form. Transfer to a bowl and mix in the lemon zest. Mix the butter and lemon juice together in another small bowl.
• Season the fish with salt and pepper. Brush with the lemon butter and then dip into the cornflake mixture, coating completely. Arrange fish on a baking sheet and sprinkle with any remaining cornflake mixture.
• Bake fish until cooked through, about 10 minutes. Turn the sticks over after 5 minutes. Serve with sauce.
NOTE: We recommend serving this with roasted potatoes and roasted fresh vegetables for a complete meal.
Makes about 12 -18 sticks

We have the perfect recipe for this great outdoors movie, Wild About Berries Pie! This recipe is a member favorite, even for those who find themselves baking a pie for the first time ☺
The Cast:
• 1 double crust pie pastry for a 9 inch pie
• 6 cups blueberries
• 1 cup sugar
• 1/4 cup cornstarch
• 1 teaspoon cinnamon
• Grated zest of one lemon
• 1 teaspoon vanilla
The Script:
• Preheat oven to 425 degrees.
• Line the pie plate with one of the pastry crusts. Prick the bottom crust with a fork.
• Mix the sugar, cornstarch, cinnamon, lemon zest and vanilla together. Stir mixture into the blueberries, tossing gently to mix well. Place pie filling into the pie pan.
• Lay the second pastry crust over the pie filling. Crimp edges together and cut air vents into the top crust in a pattern like wheel spokes (make about 4 air vents, slash pie decoratively but deeply in at least 4 places. Blueberries demand air when they bake or they will turn soggy).
• Bake in middle rack of the 425 pre-heated oven for 15 minutes. Lower heat to 375 degrees and bake for an additional 45 minutes. Cool thoroughly on a rack. When cooled, give a final chill in the refrigerator before serving.
Makes one 9” pie

• 1 ½ cups coconut
• 1 cup sugar
• ¾ cup chocolate chips
• 2 eggs, beaten
• 1 teaspoon vanilla
• 2 cups Corn Flakes
The Script:
• Preheat oven to 350 degrees.
• In a large bowl, mix ingredients together and let stand 5 minutes.
• Drop spoonfuls of the cookie dough on a cookie sheet with a teaspoon.
• Bake until golden brown, about 11-14 minutes.
Makes about a dozen cookies

It is almost bred innately in kids to love treasures. Anything from looking for their birthday gifts or trying to find something worth value in the backyard, kids love treasures. This week’s DVD is a fun one that will take the whole family on a treasure hunting adventure.

Julie: Great movie! I loved the comedy and adventure.
Ada: The kids in the movie made such a great impression of what is means to help a family.
Maranda: This is a great family movie. Very entertaining.
Worth noting: There is emotional turmoil, which leads to disrespect and yelling among family members. I recommend this movie for children 8 and older.

What better to go with this great treasure movie than a batch of Buried Treasure Cherry Bars?
The Cast:
• 1 Tablespoon walnut oil (plus more for pan)
• 1 1/4 cups spelt flakes (or rolled oats)
• 1/2 cup dried cherries
• 1/4 cup ground flaxseeds
• 1/4 cup pecans, coarsely chopped
• 2 Tablespoons pistachios, coarsely chopped
• 1/4 teaspoon salt
• 1/2 cup honey
• 1/4 cup creamy peanut butter
• 1/2 teaspoon vanilla
Makes 6-8 bars
The Script:
• Preheat oven to 325 degrees. Brush an 8 x 8 inch pan with walnut oil. Line the bottom and 2 sides of the pan with parchment paper, leaving a 2-inch overhang on each side. Brush the paper with more oil.
• In a bowl, combine the spelt (or oats), cherries, flaxseeds, pecans, pistachios and salt. Set aside.
• In a small saucepan, combine honey, peanut butter, 1 Tablespoon walnut oil, and vanilla. Cook over medium heat until melted. Add this mixture to the dry ingredients and stir to combine.
• Transfer mixture to prepared pan and smooth until it is even in the pan.
• Bake until golden and the edges pull away from the sides of the pan, about 20 – 25 minutes.
• Cool completely in pan. Using the paper overhangs, lift bars out of the pan.
• On a cutting board, cut into 6 – 8 bars using a serrated knife. Store in an airtight container, separating pieces with wax or parchment paper for one week.
