Craving a bowl of comforting goodness that can be whipped up in no time (and that your kids will actually eat)?

Well you are in luck! What makes this tortellini soup even more special is that it’s great for using up leftovers. Yes, that’s right, LEFTOVERS! The tortellini soup basics stay the same but the variations are endless.

Totally Tempting Tortellini Soup

The Basic Recipe:

6 cups sodium reduced chicken broth
3 cups fresh or frozen cheese tortellini

The Preparation:

Heat the broth to a gentle boil, add the tortellini and cook according to package directions until tender. Add in any extras from the list below and simmer 10 minutes. Garnish with parmesan cheese. Serve with fresh dinner buns or a crusty baguette. Enjoy!

The Variations:

After the broth comes to a boil, and you have added the tortellini, you can add any combination of the following:

  • Spinach
  • Chopped carrots
  • Diced tomatoes
  • Cauliflower
  • Onion
  • Zucchini
  • Corn
  • Diced sweet peppers
  • Celery
  • Leftover chicken or turkey
  • Chick peas
