Every working mom knows that the secret to surviving a busy week is simple dishes that you can make ahead of time and pop in the oven. That’s why decided to do a series on make-ahead meals.
Where better to start our make-ahead meals series than with our favorite one-dish delight: Chicken Marbella! This recipe is a regular standby in our weekday menu plan and a trusty go-to dish for guests (it never fails to impress)!
Chicken Marbella is ridiculously easy to prepare. All you do is dump all the ingredients into a baking dish the night before (it takes minutes), marinade overnight and pop in the oven the next day! What’s even better is it uses ingredients you can easily stock in your pantry for those culinary emergencies! Easy-peasy!
The Recipe: One-Dish Delight Chicken Marbella
2 chickens, cut up or 6 pounds chicken pieces
¼ cup red wine vinegar
¼ cup olive oil
8 cloves of garlic, minced
2 tbsp dried oregano
Salt and pepper to taste
½ cup pitted prunes, halved
¼ cup green olives, pitted
¼ cup capers with a bit of juice
3 bay leaves
½ cup brown sugar
½ cup dry white wine
Combine all marinade ingredients together except for the brown sugar and wine.
Spread marinade in the bottom of a 10×15 inch-baking dish and add the chicken pieces, tossing to thoroughly coat.
Cover and refrigerate overnight (or for at least 12 hours).
Preheat the over to 350 degrees F (175 degrees C).
Sprinkle chicken pieces with white wine and brown sugar.
Bake for 40 minutes to an hour, basting frequently.
Note: for an extra garlic version, use garlic stuffed olives!
