MOMeo Kitchen: Popeye’s Muscle Building Spinach Squares… Toot TOOT!
Yes, it’s true (just ask Popeye)–a Spinach dish so good it will become an instant family favorite!
They’re easy to make; and combined with Carrot/Raisin Salad and Banana Oatmeal cookies you’ll have a meal so healthy and delicious you will be the ‘Lunch Time Hero’ of the house!
Popeye’s Muscle Building Spinach Squares
3 eggs, lightly beaten
1 cup (250 mL) fl our
1 cup (250 mL) milk
2 cups (500 mL) shredded cheddar cheese
4 cups (1 L) raw spinach,
coarsely chopped
salt and pepper to taste
1. Measure all the ingredients into a bowl. Mix until evenly combined.
2. Pour into a greased square silicone baking pan and bake for 20 to 25 minutes, until the top is golden and
the mixture is slightly puffed.
3. Cut into squares and serve hot.
Carrot and Raisin Salad
6 medium carrots, peeled or scrubbed and shredded
½ cup 125 mL raisins
¼ cup 50 mL lemon juice
¼ cup 50 mL olive or vegetable oil
1 tsp. 5 mL Dijon mustard (optional)
1 tsp. 5 mL sugar
½ tsp. 2 mL salt
1. Toss together the carrots and raisins in a bowl.
2. In another bowl, whisk together the lemon juice, oil, mustard, sugar and salt. Pour over carrot mixture and
toss to combine.
Banana Oatmeal Cookies
¾ cup (175ml) margarine
1 cup (250ml) sugar
1 egg
2 bananas, large, ripe and cut into chunks
1 ½ cups (375ml) fl our
1 ¾ cups (425ml) rolled oats
½ tsp. (2ml) baking soda
¼ tsp. (1ml) cinnamon (optional)
¼ tsp. (1ml) nutmeg (optional)
1. Blend butter, sugar, egg and bananas until mixture is smooth.
2. Add fl our, oats, baking soda, cinnamon and nutmeg.
3. Bake at 350°F (180°C) for 10 to 12 minutes, until lightly browned on the bottom, and firm but not crunchy.
