Panini! The perfect fast lunch that’s not the same old mac ‘n cheese or grilled cheese. Try these fantastically fast Panini recipes for a change (with a bit of a grown-up spin):

Panini Recipe #1: Chicken with Pear and Spring Onions

Roast chicken
Provolone cheese slices
Pear, sliced
Spring onions, julienned
Panini Bread

Sear the spring onions on the Panini grill and set aside. Switch grill to Panini setting. Spread mayonnaise both sides of the Panini bread. Layer roast chicken, pear slices, spring onion and provolone cheese. Grill until cheese is melted and pear is warm.

Panini Recipe #2: Chicken with Artichokes and Brie

Roast chicken
Artichoke hearts
Balsamic reduction
Mixed salad greens
Olive oil
Panini Bread
