Panini Recipe #1: Chicken with Pear and Spring Onions
Provolone cheese slices
Spring onions, julienned
Sear the spring onions on the Panini grill and set aside. Switch grill to Panini setting. Spread mayonnaise both sides of the Panini bread. Layer roast chicken, pear slices, spring onion and provolone cheese. Grill until cheese is melted and pear is warm.
Panini Recipe #2: Chicken with Artichokes and Brie
Mixed salad greens
Drizzle the Panini bread with olive oil. Layer roast chicken, artichoke hearts, and mixed salad greens. Drizzle with balsamic reduction and top with Brie. Grill until Brie starts to melt.
